- 1 Sauté onion and bell pepper until soft.
- 2 Add ginger, garlic, and red curry paste — cook 1 min.
- 3 Pour in chicken broth + a little water, fish sauce.
- 4 Stir in coconut milk and simmer 10 min.
- 5 Add spinach or greens, stir until wilted. Serve.

Hearty, nourishing, and great for meal prep.
- 1 Sauté diced onion and carrots in olive oil until soft.
- 2 Add minced garlic, cook 1 min.
- 3 Add chicken breast and chicken broth. Bring to a boil.
- 4 Reduce heat, add bay leaves. Simmer 15–20 min until chicken is cooked.
- 5 Remove chicken, shred, return to pot.
- 6 Add white beans and kale. Simmer 5 min. Season to taste.
