Coconut Curry Soup

Tofu or chicken — warming, weeknight-friendly. Adapted from Salt & Lavender.

  1. 1 Sauté onion and bell pepper until soft.
  2. 2 Add ginger, garlic, and red curry paste — cook 1 min.
  3. 3 Pour in chicken broth + a little water, fish sauce.
  4. 4 Stir in coconut milk and simmer 10 min.
  5. 5 Add spinach or greens, stir until wilted. Serve.

Chicken, Kale & White Bean Soup

Hearty, nourishing, and great for meal prep.

  1. 1 Sauté diced onion and carrots in olive oil until soft.
  2. 2 Add minced garlic, cook 1 min.
  3. 3 Add chicken breast and chicken broth. Bring to a boil.
  4. 4 Reduce heat, add bay leaves. Simmer 15–20 min until chicken is cooked.
  5. 5 Remove chicken, shred, return to pot.
  6. 6 Add white beans and kale. Simmer 5 min. Season to taste.
